The cauliflower rice bowls sound good. I’ve been thing of trying to make Vietnamese  vermicelli bowls using Zoodles. There are so many parts that I have to try making, though, before I can do a entire bowl.

WOW! It looks like I’m also an LTEE and have been since my diabetes diagnosis in 2001. I have really moved things forward since my surgery in 2014. I get antsy if I don’t exercise!
